I have badger flame beets, which are stiped orange and red, very sweet, and so pretty! These beets are so sweet, they are good raw in a salad. I put a parsnip on my grocery list because the recipe sounded so good. I use this opportunity to try new recipes and try new skills – i.e., they are guinea pigs for my experimentation! I searched on baked carrots and beets with thyme and found your recipe. Every week I have Sunday dinner with two friends and we alternate cooking.
